Clean the slices of veal from the grease and beat lightly with the hand or with a meat mallet and season with salt . In a bowl beat the eggs with a pinch of salt , then soak the slices of meat . Then move in corn flour for breading , so it fits snugly over the entire surface . Use scissors to make small cuts on the edge of the slices that will stop it from curling during cooking . In a large pan heat a little ' of olive oil ( the meat should not be completely submerged ) , the slices and cook for 8-10 minutes , until golden , turning halfway through cooking . Drain the slices breaded on a sheet of absorbent paper and serve hot .
